Objective of Work Package : This WP investigates the environmental and nutrition-related health impacts of current food consumption in urban Norway and explores alternatives towards more sustainable food systems. It will analyse Norway's current food and feed consumption and trade patterns, identify where food and feed are sourced from, and quantify associated environmental impacts. Particular attention will be given to biodiversity, human health and unhealthy ultra-processed foods, as well as to the environmental and health implications of alternative sustainable diets in the Norwegian context.

Methodology : WP1 will combine Life Cycle Assessment (LCA) (ISO 2006) and Multiregional Input-Output (MRIO) modelling (Stadler et al., 2018) to identify the origin and quantify the environmental impacts of more than 200 food products consumed in Norway. First, we will analyse current food and feed consumption patterns and construct a trade network using the FABIO-EXIOBASE model and results from the BAMBOO and RAINFOREST projects (T1.1). The trade models will then be coupled with the updated LC-IMPACT method (Verones et al., 2020) to quantify environmental impacts, particularly on biodiversity, and with GLAM nutritional characterisation factors to assess nutrition-related human health impacts (T1.2). This analysis will provide the ecological ceiling of the Doughnut model for Trondheim and Oslo. We will compare current Norwegian food consumption with suggested sustainable diets, such as the EAT-Lancet diet, and intermediate scenarios co-created in WP3, assessing their environmental and nutrition-related health impacts. Finally, product-level LCAs will assess selected popular ultra-processed foods consumed in Norway, including impacts associated with packaging and food waste (T1.3). The results will provide the environmental baseline for exploring pathways towards more sustainable, fair and healthy urban food systems in WP3.

Output : A quantitative assessment of the environmental and nutrition-related health impacts of current and alternative Norwegian food consumption, including trade patterns, sustainable diet scenarios and ultra-processed foods, providing the ecological baseline for the Trondheim and Oslo Doughnut models and supporting the development of pathways towards sustainable, fair and healthy urban food systems.
